The most useful view of the sky is the one you
see from your home location, bounded by your local horizon.
This is what Stargaze gives you by default.
Wherever you live on Earth there will
always be parts of the sky you won't be able to see.
If you live in the Europe, for example, Crux - the Southern Cross - will never
be in view.
You can choose either hemisphere of the sky from the Map type sub-menu...

The Northern and Southern sky maps show the
entire hemisphere 'above' and 'below' the plane of the Earth's equator.
The stars appear in fixed positions because these views are independent of the
rotation of the Earth.

... observing how the planets, sun and moon move relative to the background of
fixed stars.
